The Fynbos Wine Experience is a landscape-driven proposal that reimagines winery architecture as a quiet extension of the natural environment. Designed by Pieter Krog, the project was recognised as a Shortlisted entry of Pour 2020.

Rather than positioning the winery as a dominant architectural object, the proposal places much of the complex within the terrain. Its fragmented rooms, sunken circulation routes, planted roofs, monumental openings, and rust-toned volumes establish a tranquil relationship between people, architecture, wine, and the distinctive landscape of the Western Cape.

The central idea is simple yet powerful: the winery should not merely occupy the landscape. It should become part of it.

Through this approach, The Fynbos Wine Experience transforms the conventional winery visit into a carefully choreographed journey. Guests move through dense vegetation, narrow corridors, framed views, intimate courtyards, tasting patios, and interconnected production spaces. Architecture is gradually revealed rather than immediately presented, encouraging visitors to experience the site through movement, curiosity, and discovery.

A Winery Architecture Concept Rooted in Fynbos

The conceptual foundation of the project comes from the Cape Floral Kingdom and its characteristic fynbos vegetation. Instead of treating this ecology as decorative landscaping around a building, the proposal uses fynbos as the primary element shaping the architecture, programme, circulation, and visitor experience.

The design boards describe the project as “a tranquil connection between man, shelter, and wine.” This connection is created by allowing the indigenous landscape to flow around, between, and above the different architectural spaces.

The building appears to sink into the terrain while vegetation occupies the spaces between its programme clusters. From a distance, the winery is partially concealed, with only selected volumes and large Corten steel openings rising above the planted ground.

This strategy gives the landscape visual priority. The architecture remains present, but it does not compete with the surrounding mountains, vineyards, and native planting. Instead, the winery becomes a series of carefully positioned interventions within a larger ecological composition.

Architecture That Disappears Into the Landscape

One of the defining characteristics of The Fynbos Wine Experience is its semi-embedded form.

The architecture is carved into the site rather than placed directly on top of it. This allows the natural terrain to continue across much of the complex while reducing the apparent scale of the winery. The planted landscape surrounds the tasting rooms, restaurant, production spaces, visitor facilities, and circulation areas, making the project feel less like a single building and more like a collection of inhabited clearings.

The proposal avoids a conventional monumental facade. Instead, it uses selected vertical elements and large framed openings to signal the presence of the winery.

These openings perform several roles. They introduce daylight into spaces positioned below or within the terrain, create visual connections with the mountains, and offer moments of orientation along the visitor route. Their scale contrasts with the otherwise restrained and partially hidden architectural composition.

The result is a form of landscape-integrated winery architecture in which the building is discovered incrementally. Visitors do not encounter the entire complex at once. They experience a sequence of fragments, thresholds, views, and atmospheric spaces.

Small Architectural Clusters Instead of One Large Building

The winery is divided into a series of smaller spatial clusters.

This fragmented arrangement reduces the visual impact of the programme and allows the architecture to respond more sensitively to the terrain. Each cluster can establish a different relationship with the landscape, light, circulation, and surrounding activity.

Production areas, tasting facilities, hospitality spaces, visitor services, and communal programmes are distributed across interconnected volumes. Narrow passages and transitional courtyards link the different functions while maintaining a sense of intimacy.

The rooms extend outward like fingers from a shared organisational spine. This configuration allows fynbos planting to move between the architectural wings, creating direct contact between interior spaces and vegetation.

The strategy also separates public, semi-public, and service areas without isolating them completely. Visitors can observe parts of the winemaking process while continuing along the tasting journey, while operational movement can occur through more controlled service routes.

By breaking the programme into smaller parts, the design avoids presenting the winery as an oversized industrial facility. It instead creates a village-like composition embedded within the landscape.

The Tasting Journey as an Architectural Experience

The visitor experience begins before guests enter the building.

Parking and other support services are positioned toward the lower part of the site. From there, visitors continue through the landscape on foot. A separate service route supports the operational requirements of the hotel and winery without dominating the main public journey.

As visitors move through the fynbos, they initially encounter the natural environment rather than the building. The winery remains partly concealed, generating curiosity about what lies within the terrain.

The approach leads toward large rust-coloured openings that emerge from the vegetation. These elements act as visual markers, drawing guests deeper into the complex.

After entering the arrival space, visitors follow a clear datum through the building. Controlled daylight and shadow guide movement toward the tasting rooms, restaurant, and production areas. At intervals, larger openings reveal new programmes or frame distant mountain views.

The architecture uses these moments of revelation as spatial rewards. Movement becomes an active part of the experience, with each destination reached through a deliberate sequence rather than a direct route.

This creates a slower and more immersive form of wine tourism. Guests are encouraged to observe the vegetation, changing light, framed landscapes, material surfaces, and winemaking spaces as interconnected parts of one journey.

Landscape Frames and Mountain Views

Views are carefully composed throughout the project.

Large openings function as landscape frames, turning the surrounding mountains and vegetation into central elements of the interior experience. Instead of relying on continuous panoramic glazing, the proposal creates specific points where the exterior is dramatically revealed.

This selective approach gives each view greater significance. A mountain vista appears at the end of a corridor. A planted slope becomes visible beside a tasting room. A courtyard introduces daylight into a deeper part of the building. A tall opening creates a visual connection between the semi-underground interior and the open sky.

Light and shadow reinforce these spatial sequences. Narrower passages create moments of compression, while large windows and courtyards produce expansion, brightness, and visual release.

The result is a tasting journey shaped not only by wine, but also by the changing relationship between enclosure and openness.

Tasting Patios Surrounded by Wine and Nature

Protected tasting patios are positioned along the southeastern side of the complex.

These outdoor rooms create sheltered settings where visitors can enjoy wine while remaining connected to the production and storage areas around them. The patios provide a more intimate alternative to conventional open terraces, offering controlled views and protection from changing environmental conditions.

Glass surfaces maintain visual connections between the patios, tasting rooms, and adjacent spaces. At the same time, the surrounding fynbos softens the boundaries between architecture and landscape.

These patios strengthen the sensory dimension of the project. Visitors can experience the colour and texture of the native planting, the temperature of the air, the movement of shadows, and the material character of the winery while participating in the tasting programme.

Wine is therefore experienced within the environment that gives the project its identity.

Connected Spaces and Intimate Circulation

Within the tasting facilities, different programmes are linked by narrow passages.

Bathrooms, kitchens, storage rooms, service spaces, tasting areas, and dining functions are positioned within distinct volumes. This arrangement allows each programme to maintain a clear identity while remaining part of a continuous visitor route.

The passages provide moments of spatial compression between larger rooms. They also reduce the amount of space occupied by circulation, allowing more of the complex to remain dedicated to functional and experiential programmes.

Windows positioned at key points draw natural light into the internal routes. These openings help visitors understand their position within the complex while maintaining visual contact with the landscape.

The circulation is intentionally indirect. There are few shortcuts between major destinations. Guests must move through the project, encounter its different programmes, and experience the changing relationship between the winery and the terrain.

A Central Entrance and Orientation Hub

The entrance operates as the central organisational point of the complex.

From this space, visitors can check into the hotel, wait for restaurant reservations, enquire about events, or begin exploring the winery. The entrance therefore functions as both a reception area and a distribution hub.

Rather than treating arrival as a single doorway, the design organises it as the beginning of an architectural journey. Guests are introduced to the material language, framed views, and layered circulation system before moving toward the tasting and hospitality areas.

This centralised arrangement helps manage several visitor groups while maintaining a clear overall structure. Hotel guests, restaurant visitors, tourists, event attendees, and wine enthusiasts can enter through a shared point before moving toward their respective destinations.

Corten Steel as a Marker Within the Landscape

The visible architectural volumes are characterised by dark, rust-toned Corten steel surfaces.

These elements rise from the planted terrain as controlled geometric markers. Their strong colour distinguishes the architecture from the green and floral landscape without making the complex appear excessively monumental.

The Corten steel volumes are particularly effective around the large windows and entrance openings. Their depth creates shade, frames views, and increases the sense of transition between the exterior landscape and interior rooms.

The material gives the project a grounded and robust identity appropriate to the winery programme. At the same time, its earthy tones establish a visual relationship with the soil, vegetation, and agricultural character of the site.

Inside, glass, concrete, and restrained finishes create a quieter atmosphere. This allows daylight, vegetation, wine storage, and exterior views to remain the primary visual focus.

Supporting Winemaking Through Semi-Embedded Spaces

The decision to place much of the winery within the terrain is not only aesthetic.

The semi-embedded architecture responds to the operational requirements of wine production by creating protected spaces with a strong connection to the ground. Storage, production, service, and tasting functions are organised within a compact system of interconnected volumes.

The clustered arrangement allows the programme to be separated according to different environmental and functional requirements. Public tasting areas can remain connected to the landscape, while service and production zones can operate more privately.

Visitors are still given controlled views into wine storage and production spaces. This transforms the technical processes of the winery into part of the public experience without disrupting daily operations.

The project therefore combines hospitality, education, production, and landscape interpretation within a single architectural system.

A Socioeconomic Programme Connected to Kayamandi

The proposal extends beyond wine production and tourism through a community-based fynbos nursery programme.

Local residents of Kayamandi would grow fynbos plants at their homes using species that require relatively limited resources. The plants would then be transported to the wine farm, displayed along the visitor paths, and offered for purchase.

This programme creates a potential source of income for participating residents while continuously contributing to the planted environment of the winery.

The concept establishes a direct relationship between the local community, the visitor economy, and the landscape identity of the project. Fynbos is not treated only as a visual theme. It becomes part of an economic and social exchange.

Additional programmes include a chapel or conference centre, an outdoor theatre, and a space that could operate as a Sunday marketplace. These functions expand the project beyond a conventional winery and allow the site to support cultural events, gatherings, performances, and community activity.

A Fynbos Interpretation Centre and Winery

Juror Alejandro García Pedrón praised the decision to divide the rooms into smaller clusters. This observation reinforces one of the proposal’s strongest architectural strategies: reducing a large programme into a series of intimate volumes that can be integrated more effectively into the landscape.

However, he also noted that the project appears more like a fynbos interpretation centre than a winery.

This criticism identifies both a challenge and a distinctive quality within the proposal. The architectural narrative gives substantial importance to the indigenous landscape, community nursery, walking routes, framed vegetation, and educational experience.

As a result, the fynbos concept occasionally becomes more visually dominant than the winemaking process itself.

A more developed version of the proposal could strengthen the identity of the production areas, clarify the movement of grapes and wine through the facility, and make the technical requirements of winemaking more visible within the architectural narrative.

Doing so would preserve the landscape concept while creating a more balanced relationship between ecological interpretation and winery operations.

Jury Response to the Landscape Integration

Juror Anouk Legendre described the proposal as well integrated into the landscape. She specifically recognised the effectiveness of semi-embedding the architecture within the ground and noted that this approach responds appropriately to the constraints of winemaking.

Her assessment confirms the strength of the project’s primary architectural decision. By sinking the complex into the terrain, the proposal reduces its visual impact while supporting the spatial requirements of production and storage.

Legendre also identified the exterior spaces as less resolved, particularly the pathways and parking areas.

This critique is important because the visitor journey begins outside the building. The project places considerable emphasis on walking through the landscape, yet the architectural boards provide less detail about the material treatment, accessibility, drainage, shade, wayfinding, and ecological performance of these routes.

The parking area also requires greater integration with the overall landscape strategy. Additional planting, permeable surfaces, shaded pedestrian connections, and clearer separation between vehicles and visitors could strengthen the arrival sequence.

Addressing these elements would make the exterior experience as carefully considered as the semi-embedded interior architecture.

Balancing Seclusion and Social Interaction

The site strategy creates both secluded outdoor spaces and areas where local residents, guests, and visitors can interact.

Private courtyards and tasting patios provide calm environments for smaller groups. In contrast, the marketplace, theatre, entrance, and shared pathways support broader social activity.

This balance is reflected in the project’s spatial organisation. Some parts of the complex encourage contemplation and slow observation, while others are designed for gathering, tasting, performance, education, and exchange.

The architecture therefore supports different scales of experience without relying on a single large public space. Interaction is distributed throughout the landscape in a series of connected nodes.

This approach allows the winery to remain tranquil while still functioning as an active social destination.

A Tranquil Connection Between People, Shelter, and Wine

The Fynbos Wine Experience presents winery architecture as a sequence of relationships rather than a standalone object.

It connects winemaking with indigenous vegetation, hospitality with landscape interpretation, and visitor movement with carefully framed moments of discovery. Its semi-embedded rooms allow the terrain to remain visually dominant, while large Corten steel openings introduce light, views, and architectural identity.

The strongest aspects of the project are its integration with the site, fragmented programme, controlled visitor journey, and transformation of fynbos into an architectural, social, and economic framework.

The jury comments also reveal opportunities for further refinement. Exterior paths and parking areas require greater resolution, while the winemaking programme could be more clearly expressed to balance the project’s identity as both a winery and a fynbos interpretation centre.

Despite these areas for development, the proposal offers a compelling alternative to object-driven winery design. It demonstrates how architecture can recede into the landscape while still creating memorable spaces for production, tasting, gathering, and contemplation.
