Innovative Coffee Shop Design: Milky’s Fold by Simone Ferkul Projects
Milky’s Fold redefines coffee shop design with its three-dimensional diamond motif, innovative layout, and hospitality-focused architecture.
Milky’s Fold, the third coffee shop by the celebrated Milky’s brand, redefines coffee shop design with its innovative approach. Located at 1243 Dundas St W in Toronto, the space was unveiled in March 2024. Designed by Simone Ferkul Projects, this location advances the iconic design language of the brand while introducing a unique three-dimensional twist. The distinctive elongated diamond motif, a hallmark of Milky’s, is brought to life through metal, wood, and stone surfaces that seamlessly merge functionality with aesthetics.

Reimagining Design with Three-Dimensional Diamonds
The design ethos for Milky’s Fold stems from the desire to surprise and engage. While previous locations were dubbed "the wood one" or "the stone one" due to their defining materials, Milky’s Fold defies expectations by transforming its signature diamond motif into a three-dimensional experience. Over 300 hand-cut wooden diamond pieces adorn the bar wall, creating a subtle yet impactful brand moment.
This geometric design is not just decorative but functional, incorporated into shelving, displays, and even a door handle. The result is a cohesive visual language that captures Milky’s innovative spirit while enhancing the customer experience.

Navigating Shared Spaces
Milky’s Fold shares its space with The Fitting Room, a locally renowned barbershop, necessitating a thoughtful overlap of aesthetics and functionality. Simone Ferkul carefully balanced materials, forms, and colors to create harmony between the two businesses while maintaining distinct identities. Light finishes interspersed with warm oak accents serve as touchpoints for customer engagement, guiding the eye and creating a welcoming atmosphere.

Enhancing Hospitality Through Design
The layout of Milky’s Fold prioritizes hospitality and interaction. Warm wooden elements, exemplified in the food display and seating areas, anchor guest interactions and foster a sense of connection. Visibility between baristas and customers is a key feature, encouraging conversation and showcasing the artistry behind each beverage.
Despite the narrow space, innovative solutions ensure comfort and usability. The shop features two seating modes: high tops for leaning and casual low seats with tables. Cleverly integrated storage and seating solutions maximize the use of space, creating an inviting environment that encourages customers to linger and enjoy Milky’s renowned offerings.

Lighting and Collaboration
Milky’s Fold highlights collaborations with Anony and Relative Space, whose contributions enhance the overall aesthetic. The Pola light by Anony, a standout feature above the bar, echoes the geometric details of the space. The interplay of lighting and materials further elevates the design, creating an ambiance that is both functional and visually captivating.

A Legacy of Design and Coffee
Milky’s Fold continues the brand’s tradition of blending exceptional coffee with groundbreaking design. Founded by Fraser Greenberg, Milky’s is known for its thoughtful hospitality, original beverages, and commitment to creating unique customer experiences. Each location serves as a canvas for innovative design, with Milky’s Fold setting a new benchmark for creative coffee shop architecture.
This space, with its three-dimensional diamonds, harmonious shared design, and hospitality-centered layout, embodies the evolution of the Milky’s brand and its commitment to innovation.
