ROOTSTUDIO has unveiled its latest transformative project: the Oaxaca Gastronomic Center, a dynamic fusion of heritage preservation, sustainable architecture, and gastronomic celebration. Located in the historic former convent of Carmen Alto in Oaxaca de Juárez, Mexico, this 7,000 m² architectural masterpiece reinterprets viceregal heritage into a vibrant culinary and educational hub.

A Historic Convent Reimagined

Once a 16th-century convent, the Carmen Alto complex has undergone a meticulous restoration led by ROOTSTUDIO. In collaboration with the National Institute of Anthropology and History (INAH) and state institutions like INPAC and IOCIFED, the design preserves the site's colonial essence while introducing contemporary functions. Original materials such as lime plaster, clay brick, carved wood, and green quarry stone were used to faithfully revive vaulted ceilings, sealed windows, and frescoed walls.

Architectural Integrity Meets Modern Use

ROOTSTUDIO’s approach balances architectural conservation with adaptive reuse. The center now includes:

  • Rectorate and classrooms
  • A public library
  • Restaurants and tasting rooms
  • Kitchens and cocktail labs
  • Multipurpose halls and galleries
  • An outdoor event courtyard within restored arcades
  • Commercial spaces and a contemporary two-story pavilion

A striking new element—a modern steel-and-brick kitchen structure—symbolizes the project’s dialogue between the past and present.

Rooted in Oaxaca’s Gastronomic Identity

The Gastronomic Center of Oaxaca is not just a building; it's a living archive of Oaxacan culinary culture. Educational programming and interactive exhibitions engage visitors with the region’s indigenous ingredients and cooking traditions. A rediscovered 18th-century sewer was innovatively repurposed into a tasting room for ancestral mezcal, connecting visitors to deep-rooted local practices.

The landscaping further amplifies this narrative, with gardens populated by edible and medicinal plants like maguey, guajes, yuccas, and zapotes, reestablishing the site's ecological and spiritual relevance.

Sustainability and Local Craftsmanship

Under the leadership of Joao Boto Caeiro, ROOTSTUDIO emphasizes sustainable architecture and carbon neutrality. The project incorporates:

  • Solar energy systems
  • Net-zero CO₂ construction materials
  • Chemical-free waterproofing solutions using soap and alum
  • Locally crafted custom furniture made from macuil (rosewood)
  • Inclusive design with accessible pathways and features for all users

A Canvas for Oaxacan Art

The interior features contributions by prominent local artists. Damian Flores painted the mural Men of Corn, honoring native corn species and agricultural heritage. Sabino Guisu created expressive elevator murals that visually connect each level, making the entire center an immersive artistic journey.

Located on Garcia Virgil Street, the Oaxaca Gastronomic Center reflects ROOTSTUDIO’s broader mission to weave architecture into social and environmental fabric. This project joins a portfolio of acclaimed works including the Girl Move Academy in Mozambique, Hotel Sin Nombre, and Casa Mulata, cementing the studio's reputation for regenerative design and cultural preservation.
